Artist's nib

I have a couple of pens coming (two Safetys, from Spain and Brooklyn) that look like the real deal. They are particularly useful for a left-handed writer, as a very flexy nib will give you line variation with very little pressure.

So, what kind of artist is the Artist's Nib meant for? Is Artist's Nib just a coded term for flexible nib?

Why would an artist want something flexible to write with?

As a left handed person I find flexible nibs work differently from the way they work if you write right handed.

My boss says that working with a pen makes him draw more "mindfully", meaning that he has to think about what he puts down on paper.

The pleasure of an artist's nib, or any other flexible nib, is the ability to vary the thickness of a drawn or written line. It makes it worthwhile to pay large sums of money for otherwise-uninteresting pens.
