I've tried everything from the hairdryer to warm water to get this pen apart, but it still somehow stays together.
So, now I'm pretty sure it's NOT shellac holding it together... could it be glue??? If so, how should I proceed?

Keep trying.  There may be some shrinkage as well as some kind of adhesive, and some of them take a devilish long time to see reason.  Repeated cycled of warmth will to it, if it's to be done at all.

I feel so dumb. I just got it apart, but the hood and part of the clutch ring are now stuck in the cap. (see photo) 20140828_170020_20140828170615929.jpg

How do I fix this???

Poo.  First, see if you can hook the ring out with a bent paperclip or crochet needle.  Then try gently screwing the pen back into the parts in the cap; it doesn't have to go all the way, just enough to grab.  If that doesn't work, it's back to the previously used hook, running it right up through the mouth of the hood.

Okay, did it, nothing budged. Any other ideas?

Edit: probably going to get a thinner crochet needle though, the one that I used could barely fit through the cap.

You can try threading them back together with the clutch ring still inside.  I avoided suggesting it because if it's tight, it might be too much for incompletely mated threads to handle, and you'll end up stripping something AND still have all that stuff in the cap.

...and I also should have said, teeny weeny crochet needle.  #1 or smaller.  Since this is the only thing I use them for, I tend to forget bigger ones exist.
