Is the filler knob not centered on Pelikans normal? Both my M200 and M605 have knobs that are "off axis"

Now you made me look! I looked at a 150, 200, 2 400s, 2 600s and an 800 and only the 200 seems to not be perfectly on axis.

Okay, I unscrewed it, gave it a push and voila it pops in place. Sure does wobble a lot

Anyone find that there is a little bit of play in the knobs?

Yes, and I have learned to control the urge to twist them overly one direction of the other.

This comes up a lot. It's there for a reason. Mechanically speaking. I am not the one to explain it but someone has done so before and in recent months.
Here's the word from Rick on this:

I would say all Pelikan pistons have a little bit of play, it is normal and it does not affect the performance, so stop worrying and enjoy your pen.

Yes, the play is normal... as long as the knob is not about to fall off. The knob will turn some before the piston begins to move. For mechanical devices, I seem to remember hearing that excess movement before a mechanism begins to operate is referred to as "mechanical backlash".
