A while ago a thread mentioned the site incompetech.com as a good source for templates for ruled pads, diaries etc. It is great so thank you for that.
But the same thread mentioned there was a way to save the pdf and then open it as a different doc and remove the imcompetech brand at the footer. Can anyone talk me through how to do that?

Any graphics program that can open, edit and save PDF files will do the job. I used both Adobe Illustrator and GraphicConverter on the Mac to delete the brand at the bottom of the page.
There is a program for PC that will do the job (apart from Illustrator) called Foxit Pro. You can download a free reader, but if you want to edit the document and save it without watermarks, you have to pay for it.

Here are two approaches.
1) Convert the PDF to a Word document with one of the various utilities, (PDF Convert is one), then edit it and re-save it as a PDF. There will probably be some slight changes in the alignment of elements, as Word generally does not tolerate fine position control.
2) Use a program that will allow direct editing of a PDF, e.g. Adobe Acrobat (full version, not Reader), Adobe Illustrator, Serif Page Plus, etc. These will let you open a PDF in native mode, edit it, and save it back to PDF. The down side is that it is expensive. Adobe Acrobat Std. is ~$300, Adobe Illustrator is ~$500-$600, and Serif Page Plus is $130. The upside is that programs like Page Plus and Illustrator are designed for graphics editing and layout, which is what works best for a template like those from incompetech.com.
There are free PDF print utilities, CutePDF is great, but I haven't found a good free PDF to ??? converter.

In Adobe Acrobat it is easy to do using text editing on the advanced edit toolbar. I decided to try that after reading this post and it took a tiny amout of fiddling to figure out what to do because I have not worked in Acrobat much.

Sorry if I'm curmudgeony (I'm much too young for that)...
But if someone has done all this work for you, for free, why not leave the logo there so credit can be given where credit is due?
I'm not too much of an intellectual property nitpicker, but the least we can do to acknowledge the creator of all those templates is to leave his/her/their mark on it. If that's all the payment Incompetech is asking for, give it to them.
If this was discussed in the original thread about Incompetech's templates, please excuse me.

I take it off because it is for ME. I do not give the paper to anyone, I am the only one who uses it.
And it distracts me.
I give credit where credit is due. If anyone asks about the paper, I tell them where they can print some!

Or you could just make your own lined paper and not worry about a watermark.

Scanning incompetech.com, I can see no Terms of Use information for the PDF files...
If the footer block gets in the way of pager numbering, or your own footer information, I guess one option would be to turn the footer block 90 degrees counter-clockwise, and place it down the left-hand side of the page, near the binding. That way, it won't get in the way of writing, but it is still visible.
If they were my paper generators, I wouldn't mind a personal user removing the footer. I would mind if someone generated twenty templates, made an organizer and sold it in The Marketplace as their own creation. If they left the footers on those pages and sold it, well, we're back to not minding.

If you're using or have access to a Linux desktop, there is an application called "PDF Editor" that is exactly that available free. It's a bit clumsy to use in my opinion, but it works and the price is right.

Two thoughts...
My impression is the owner of the page likely considers the program that produces the PDF their intellectual property, rather than the output it produces.
Second to resolve the headers issue simply run it for A4 paper and then print centered with no scaling on 8.5x11. The tag should drop off.

I must have been on the wrong site. I didn't see any .pdf's at www.incompetech.com. What were they listed under? I clicked on the grap paper link and got links for places to buy graph paper.
