I just purchased my first vintage Esterbrook SJ this week. The pen shippped today, so I won't get it until early next week. Now I just need to decide on a color of ink for it, I'm leaning toward one of the Noodler's blue inks, preferably something waterproof.
My question is: is there anything I need to do to a restored pen before inking it and giving it a test write?

Nope, if it has been restored - you're good to go. If you are in doubt, I suppose you could water test the fill system before inking on the off-chance there was something wrong with the sac replacement/inspection or the restorer didn't clean the pen after testing. That would ensure no leaks or ink colour mixing in the pen.
